Basa fins cut in broad triangular pieces, the skin pale pink and glossy, the flesh creamy white where it folds over. One edge carries a fan of fine spiny rays standing proud of the meat, and a line of deeper red runs along the opposite edge. The meat is soft and fatty with a mild taste, and the skin and rays hold it together in the pan. Sear it skin-side down, grill it, or slice it thin and dress it with soy and citrus.
