Fresh Silver Pomfret Whole Fish
Whole pomfret, three at a time, with deep flat bodies that taper to a narrow tail. The skin is silver with a blue-grey wash along the back, fine scales catching the light, a small blunt head and a long low fin running the length of the upper and lower edge. They are shown raw on a cream plate with lemon and spring onion, raw on a plate with sliced ginger, and pan-fried to a golden finish on a white plate on a steel bench.
The flesh is fine and sweet with a single central bone, and the flat shape cooks evenly. Steam whole with ginger and spring onion, pan-fry until the skin crisps, or bake it with lemon.
