Small slender fish, almost entirely translucent white with a faint silver sheen and a single dark eye at the head. They are laid in neat parallel rows: on a white plate scattered with chopped green onion, in two small blue-rimmed dishes on a kitchen counter with a hand reaching in, and in a loose heap on a white cutting board beside a tray of ice.
The bodies are soft and delicate with a clean, mild taste and almost no bone to notice. Fry them briefly until crisp, steam them with egg, or drop them into broth and noodles at the end of cooking.
