Wild Caught Striped Tiger Prawns
Large whole prawns with long serrated rostrums and antennae sweeping back over the body. The shells are banded in dark brown and cream, and the fan tails flash blue and yellow at the tips. They are shown three at a time on a white plate with spring onion on a wooden table, on a white plate with parsley, lemon and cherry tomatoes on a steel bench, and four together on a black slate beside a sink.
The meat is thick and firm with a sweet, clean taste, and the shells hold their shape in the pan. Grill or pan-fry them whole, steam them briefly, or split them and finish with garlic butter.
